Vezzena
Vezzena is a semi-hard, semi-cooked cheese, produced in the summer grazing period from partially skimmed pure cows’ milk. Richly flavoured and aromatic due to the strongly perfumed milk produced by the mountain dairies, it is seasoned in cool rooms or cellars with high humidity. inimum maturation for consumption fresh is 6-8 months, whereas longer seasoning of 15-24 months makes it ideal for grating.
